Gourmet Summer Entertaining
Our friend and good customer Megan Rich served up a great dinner of Shrimp and blue cheese dip- it was a remarkable combo and I would highly recommend for summer grilling !
Ingredients
1/2 cup sour cream
1/4 cup finely chopped scallions
2 Tbsp finely chopped Italian flat leaf parsley
1/2 cup crumbled blue cheese (2 oz)
2 tsp fresh lemon juice 1 1/2 tsp milk
Salt Pepper
18 jumbo shrimp, peeled, leaving tail, deveined
2 Tbsp smoked oil, or olive oil 1/2 stick unsalted butter, melted
1/4 cup hot sauce (Frank’s Red Hot)
1/2 bunch celery cut into 4” stick
- Stir together sour cream, scallions, parsley, blue cheese, lemon juice, milk, 1/8 tsp salt and 1/4 tsp pepper. Set dip aside.
- Prepare grill for direct cooking over medium heat
- Toss shrimp with oil and 1/2 tsp each salt and pepper. Oil grill rack, then grill shrimp, (covered if using a gas grill), Turing once, until just cooked through, 7-8 minutes total
• Mix butter and hot sauce in a large bowl. Add shrimp and toss. Serve with dip and celery
Megan has provided for the last 15 years back stage, pre show, physical therapy and training for national touring Broadway musicals and shows for The Hippodrome at Frances-Merrick Performing. Her personal experience as an elite level gymnast and professional dancer shaped her career path as a physical therapist and dance teacher/choreographer at the Australian Institute of Sport where she worked with Olympic level athletes. After returning to the US Megan began establishing her client base eventually opening Megan Rich Physical Therapy with her husband Brian. She also happens to have two really terrific daughters that we love to have in the store. They are independent, savvy and great company.
